Job Description
A Mozzarella Maker is responsible for making fresh Mozzarella according to Eataly’s authentic Italian recipe. Functionally reports to the Fresh Market Manager.
- Utilizes fresh mozzarella curd to heat, stretch by hand, and make housemade mozzarella and other pasta filata offerings fresh daily, according to Eataly recipes
- Engages all senses: tastes, smells, feels, listens, and observes all characteristics of each batch to maintain and elevate quality
- Records daily the weight of ingredients used, batch sizes, and amounts transferred to other outlets
- Makes variations in time cycles and ingredients used as necessary for succeeding batches
- Cares for and handles products with careful attention to quality control and waste management
- Weighs, packages, and labels mozzarella lab offerings
- Stocks display refrigerators neatly, accurately, and in a timely manner
- Provides guest service and information on mozzarella-making process to guests
- Cleans work station thoroughly following food safety best practices
- Ensures collateral supplies are in stock and being utilized properly in the lab
- Performs other duties as required or assigned
Qualifications
- Basic math skills
- Good communication skills
- Excellent attention to detail
- Previous cheese making and/or food production experience preferred
- High school graduate or equivalent preferred
Job Requirements
- Availability to work a flexible schedule, including weekends
- Ability to lift up to 50 pounds
- Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending, and squatting
- Ability to work within a kitchen production environment and use commercial kitchen equipment
